Low Fat Cake?!?!

1 cake mix + 1 can diet soda = low fat cake!

I first heard about this idea from a co-worker and had to give it a try!

This is a Low-fat version of the traditional "Strawberry Poke Cake". Just mix one box of white cake mix with one can of diet Sierra Mist, 7-up (or whatever you have on hand) and bake as directed on the box. After cake has cooled, use a fork and poke holes all over the top of the cake. Mix one box of strawberry jello with one cup of cold water until mixture has dissolved. Pour Jello over the top of the cake. Top with Cool Whip (i used Sugar-free) and Enjoy!! Very delicious!

"Chocolate Eclair Cake"

1 box chocolate cake mix

1 can diet coke (yep, i use it whenever i can!!!)

1 box vanilla pudding

1 box chocolate pudding

Cool Whip

*Mix cake mix with can of diet coke. Bake as directed.

*Cool completely. Use a wooden spoon handle (you will want bigger holes to allow the pudding to get into the cake) and generously poke holes on the top of the cake.

*Make vanilla pudding according to package. Pour over the top of the cake. Let set for a while.

*Make chocolate pudding according to package. Fold whip cream (use the amount that looks good to you!) into the pudding. Frost the cake with the mousse mixture!

  1. Gosh, I think we could be friends in real life, as I make this as well! It was an old tried and true Weight Watchers recipe....any diet soda and cake mix. Works like charm everytime! I haven't made it in a really, really long time!

  2. that looks really good. I've never used diet coke or any diet pop in baking even though i've wondered about it. thanks for testing it out and now i know - it WORKS and looks great!
