Marinated Mediterranean Salad


Need something quick to throw together for that bbq...


or just something light and refreshing to eat?


This Mediterranean Salad will do it!


I love all of the bright colors and you can't beat the


mixture of flavors!



Tomatoes, fresh basil (yum!), onions, black olives and


Italian dressing!



Throw in some cooked pasta of your choice


and nice chunks of mozzarella cheese!


Put in the fridge to cool nicely... it will be worth the wait!!




Ready to devour!

Sausage Stuffed Meatballs

Ok-this recipe is a little gem to keep tucked right in the front of your recipe file;)
These are perfect to serve by them selves or piled on top of a mound of spaghetti.
So yummy and oozy with cheese-totally delish!!
Just change up the sauce and you have a completely different meal:)

Recipe rundown:

1 lb. chicken sausage
red onion
Italian parsley
salt
pepper
mozzarella balls

So first mix first 5 ingredients together and form into balls

Like above

then top each ball with a mozzarella

press down cheese

cover completely with meat

place meatballs in heated dutch oven or heavy pan

brown on all sides

like so:)
Reduce heat, add sauce and simmer until cooked through-about 7 to 10 mins.
Serve atop spaghetti

Pumpkin Baked Ziti

Paula Deen is always hilarious, but watching her make this dish with Richard Simmons was a riot! Two complete opposites- Butter/Nut... Queen of Butter and Health Nut!
In the printable recipe I will list his lighter version of this recipe.

This dish was really good with a light pumpkin flavor-we used regular sausage but definitely would recommend using the sweet Italian that it calls for.

The sauce-onion, garlic, crushed red pepper flakes, pumpkin, chicken stock, and cream.

Cook and drain the sausage.

We used whole wheat pasta, I personally like the taste of it better than regular pasta.

Add the sauce to the pasta and toss to coat.

Divide between 8 prepared ramekins.

Sprinkle tops with Parmesan cheese and bake for 35 minutes until topping is golden brown.

Pasta Salad and a Upcoming Review

The semi-homemade has been my friend for awhile now...makes life a little easier;)
This salad is from a kit-Suddenly Salad-I just added a few ingredients.
This salad was very flavorful and summerey-just using stuff I had on hand!
I made it and took it to the lake one day last week-now that we finally are having Summer weather:)

For the recipe:

1 box of Suddenly Salad
Make and Mix according to package directions.

1 marinated and grilled chicken breast-chopped
1/2 c. sliced black olives
1/4 c. thinly sliced red onion
Salt and Pepper

Throw this in with the above mix and chill.

Then pack up and take it on a picnic;)


Now on to the upcoming review-I was recently contacted by CSN stores and have an opportunity to review one of their products! How awesome is that!! Yay:) The CSN stores have over 200 online stores where you can find almost anything from a sofa to a cookies sheet!!
So now I have the "chore" of picking something to review;)

Artichoke and Sun-Dried Tomato Stuffed Chicken Breast

As promised-the recipe for the chicken I used on this pizza:) I don't know if there is anything better than artichokes and sun-dried tomatoes!?! This was one of those really good meals that you will want to make many times-it's a little involved but totally worth it!

In a saute pan over medium heat add 1 T. of oil. When the oil is hot add the onions and saute until translucent. Stir in the artichokes and sun-dried tomatoes. Saute for 3 to 5 minutes, then add salt, pepper, and garlic. When garlic begins to lightly brown, deglaze with 1/4 c. white wine.

Stir in 2 T. butter, allow to melt, then toss in the Parmesan and parsley.

Remove from heat and allow to cool before stuffing the chicken breast.

Pound chicken to flatten. Put in some of the stuffing mixture and begin to roll, secure with a toothpick. Repeat with remaining chicken breasts.
Heat the remaining 2 T. of oil and add the chicken breasts, with the secured sides first, to insure the roll will stay together. Brown chicken on all sides, add remaining butter, and deglaze with rest of the wine.
Reduce heat to low and cover the pan. Cook until internal temp. reaches 165 degrees F on an instant read thermometer, about 10 minutes.
Remove the chicken to a cutting board and discard toothpicks. Slice each breast on the bias into 5 pieces and transfer to serving platter. Drizzle with pan drippings and garnish with sprinkle of parmesan cheese.

Chicken Artichoke Pasta

This pasta is a combination of some of my favorite ingredients-artichokes, sun-dried tomatoes, alfredo, and pasta-Yum!
Of course I get a bunch of complaints from my kids about all the extra "junk" in their pasta:)

1 box Penne pasta
3 chicken breast, cooked & diced
3 T. sun-dried tomato
1 14 oz can artichokes
1/2 fresh lemon-squeezed-juice
Alfredo sauce-in the jar or homemade
Salt
Pepper
A sprinkle of garlic salt
Parmesan Cheese
Cook and drain the pasta.

Cook the chicken and add the sun-dried tomato and artichoke,
heat through.
Squeeze in the lemon juice, add the salts and pepper.
Throw in the pasta and Alfredo sauce and toss to coat.
Sprinkle with Parmesan Cheese.


Alfredo Sauce

1/4 c. butter
3 c. whipping cream
Parmesan cheese
Garlic salt

In a heavy bottomed pot melt butter, add the cream and cheese. Bring to a simmer, stirring constantly add in desired amount of garlic salt.

Italian Night!!

First off I found this recipe on this blog and I had to make it! The recipe is very easy and delicious-I had everything on hand-awesome! Can't beat that:)

You let the chicken go in the crockpot all day with some of the sauce and then you cook the pasta
and thats pretty much it-EASY!
