Almond Roca Cake

I do realize that most people are probably thinking health food but....
hurry and make this before you make those nasty New Years resolutions!!
I just had to post this one since I've been hinting at it for the last few weeks!
If you have a birthday or know someone who has a birthday coming up or if you just want cake..
I highly recommend this decadent, chocolatey, creamy cake/wonder!!
I made this for my hubby's birthday, who absolutely loves almond roca candy, so I figured I try to come up with a cake that tastes the same and it turned out perfectly;)

Start out with a basic chocolate cake.
Bake in 2 9 inch round pans.

Layer on filling {printable}

Drizzle with caramel

throw on some more filling

Layer cakes on top of each other
You can kinda see the yummy Almond Roca I made to top the cake.

coat the whole cake in a semi-thick layer of the filling

Make the chocolate ganache {printable}

drizzle over-Mmmmyummy!

Then sprinkle with some remaining almond roca.

Enjoy this cake soon you can work-out the next day;)

Almond Roca

Another piece of the Almond Roca cake yet to be posted-oops, I can't believe this week got away from me so quickly!

So it looks like Michelle and I both posted today!

This stuff is the real deal-tastes just like the original!
Here's what you need:
butter, sugar, corn syrup, water, chopped nuts, and milk chocolate chips.

I used a mix of almonds and hazelnuts.
I didn't chop them too fine since I like a little extra crunch.

Melt butter, add the corn syrup, sugar and water until it turns the color of a brown bag.
Stir constantly.
Remove from heat and stir in 1/2 the nuts.
Turn onto a greased cookie sheet with edges.
Once it hardens a little score it into the shape you want-rectangles or squares.

Melt the chocolate and spread over the scored and cooled nut mixture.
Sprinkle with remaining nuts-cool completely.

Note: refrigerate over night and then break into pieces-they have better texture.

Yummy!
Put these into some cute Christmas bags to give away or add to baskets.

Chocolaty Caramel Thumbprints

Wow! Where has the time gone...only two weeks til Christmas??
Time to get the baking done!!

These thumbprints are delish and have in the last couple years been added to our definitely have to make Christmas goodie list! The problem is the list just keeps growing.... This recipe i found in the Better Homes and Garden Cookbook and as soon as i saw it, i had to try it!

A great mix of caramel, pecans and chocolate!! Check out the Printable Recipe for the full ingredient list and directions.
