Almond Roca

Another piece of the Almond Roca cake yet to be posted-oops, I can't believe this week got away from me so quickly!

This stuff is the real deal-tastes just like the original!
Here's what you need:
butter, sugar, corn syrup, water, chopped nuts, and milk chocolate chips.

I used a mix of almonds and hazelnuts.
I didn't chop them too fine since I like a little extra crunch.

Melt butter, add the corn syrup, sugar and water until it turns the color of a brown bag.
Stir constantly.
Remove from heat and stir in 1/2 the nuts.
Turn onto a greased cookie sheet with edges.
Once it hardens a little score it into the shape you want-rectangles or squares.

Melt the chocolate and spread over the scored and cooled nut mixture.
Sprinkle with remaining nuts-cool completely.

Note: refrigerate over night and then break into pieces-they have better texture.

Put these into some cute Christmas bags to give away or add to baskets.

  10. This looks so yummy. I like how lightly colored it is. Mine is always a lot darker. I am going to visit Joni and make toffee tomorrow. Yours looks fabulous. What a nice gift to get. This is something I would want to hide and not share.
