Freezer Peaches

This year we got a box of Yakima's Princess peaches and we decided to try freezing them the way Michelle's dad had last year.
So thanks to Michelle's dad and Google;)


Some of the best peaches ever!!

Cut 'em in half and pit 'em..

slice..

throw 'em in 1 can of orange juice concentrate-thawed
you can add a bit of water if you want
but the peaches were pretty juicy on their own.

make sure to toss well to coat all with the OJ

we put about 5 cups per freezer bag

These are what we used to make our Peach Streusel Coffee Cake-Yummmmy!!

Peach Streusel Coffee Cake

Doesn't the name alone just want to make

you grab a cup of coffee, a fork and dig in??

This coffee cake is so moist and delicious....

beware once you pick up the fork it will be hard to put it down!

This recipe was adapted from the Chronicles of Windy Ridge's

Apple Coffee cake... check it out!!


Very delish!!

Cream shortening and butter until light and fluffy...

Throw in a couple of eggs and vanilla; beat.

In another bowl, mix your dry ingredients:

flour

baking powder

baking soda

salt

Add dry ingredients and sour cream to mixture...


Add your peaches...

Don't skimp on the peaches!!! We used frozen peaches

and we were wishing we had added more!


Stir it all in!

Pour into greased pan.

For the topping: brown sugar, cinnamon, and butter.

Sprinkle the top with the topping and walnuts or pecans...

ready for the oven!

Decadent!!!

The recipe says to cool completely... if you can wait; do it!!!

Chocolate-Marshmallow Pillows

It's Cookie Friday!!

Yeah! :)

Chewy, Chocolaty, nutty goodness!

And Kinda dangerous to have sitting around the house!!


Start with a Betty Crocker double chocolate chunk

cookie mix and add oil, water, egg and pecans.


Drop onto cookie sheet and bake for 7 minutes....


Remove from oven and top each cookie with 1/2 of

a large marshmallow.

Return to oven for 1-2 minutes.


For the frosting...

in a saucepan, melt chocolate chips over low heat.

Remove from heat;

add whipping cream, butter and vanilla.

Blend well.


Stir in powdered sugar until smooth.


Spread frosting over each cooled cookie,

covering the marshmallow!

Yum... :)

Cranberry-Orange Scones


These scones are to die for scrumptious!!!
The original recipe is the Maple Pecan Scones from The Pioneer Woman cookbook.
I decided to change them up a bit by adding craisins and orange zest with a little white chocolate icing to top them off.

First we zest these little clementine oranges then
squeeze the the juice out.

smells soooo good!!

Cut cold butter into flour mixture until resembles crumbs
then add craisins and zest, egg and cream.
Stir until just combined then turn onto a floured board and form ball.

Fresh Raspberry Crisp

I love this time of year!!!
All the fresh fruits and veggies are ripe for the pickin'!
The kiddos and I have been out picking raspberries, blueberries, and blackberries and my freezer is packed to prove it;)
I also love, love crisps-this one is soooo easy and super flavorful.

Recipe rundown:

raspberries
sugar
butter
flour
brown sugar
oats
pecans

Get yourself some fresh picked raspberries

sprinkle with sugar

mix up crumb topping:
butter, brown sugar, oats and pecans

sprinkle topping over raspberries

Top with whipped cream and savor the fruits of Summer!!
I don't know about anyone else but I'm hanging on to Summer with everything I've got-even though the kiddos go back to school today....ugh sooooo not ready for school to start!!

Italian Chicken Panini

I just love a good sandwich and a panini is a great way to go!

Very easy to throw together....

with lots of fresh flavors!

Oven roasted chicken = deli chicken... all the work is

done for you! (Love that!)

Ingredient List:

bread

pesto

mayo

oven roasted chicken

deli smoked ham

mozzarella cheese

roasted red pepper

butter


Spread one side of bread with mayo and the other with pesto....

layer meats, cheese and peppers.

Throw on panini maker for a few minutes.....

Once cheese is melted and bread is toasted....

you are ready to dig in!
