Rhubarb Cream Delight

This is like a rhubarb cheesecake-super, super yummy!!
Cool and creamy, perfect for a summer BBQ.
I have no idea where this recipe is from I found it in my sisters recipe book one day that was lying open on the counter. The recipe was written with my own hand writing!!
So I figured I better make it and see if I remembered making before-pretty sure I haven't!
Let get to it!

There are many layers but don't let that stop you they are all quick and easy!
First off mix together crust ingredients


It's kinda crumbly....


like so..

but it comes together nicely
Set aside and start on next layer

Cut up fresh rhubarb.

Mix that with sugar and flour and pour into crust.
Bake for 15 minutes.

Next is the cream layer:
cream cheese, sugar and eggs
Bake again for 30 minutes and top with the sour cream, sugar and vanilla mixture.
Chill....then...

Enjoy!!!

~Pasty~

This is a classic recipe.
I like to put Pasty on the menu on cold, rainy days:)
Everyone should have this one for those times when you want something
that reminds you of your youth!
Not that my youth was that long ago!!
heh hee;)
Let's get right to it-
Recipe rundown:
frozen hashbrowns
shredded carrots
chopped onion
turnip-if you want;)
ground beef
cream soup
salt, pepper, garlic salt
pie crust

brown hamburger
quick tip* boil carrots just to soften

lay in bottom crust

top beef with shredded hashbrowns

season and top with cream soup

mix thoroughly

lay top crust over

pinch crust together

bake at 375 degrees for about an hour

Yummy!
Can't beat a quick and wholesome meal like this one:)

Nutella Silk Pie

There are people who love Nutella and there are people who've never tried Nutella- thats it there is no in between right?!?!
This pie is light and fluffy, smooth and silky and just downright delicious!
Perfect combination of Nutella and peanut butter-deliciously creamy and it came to be
all because of a little thing called Dessert Wars!
Dessert Wars is the brainchild of Reeni from Cinnamon Spice & Everything Nice and Christine from The Cupcake Bandit. This is a competition with a new ingredient each month, this months is Nutella, designed to push us out of our comfort zone and try something new-and there are prizes!!

After checking around I realized there are like a million and one Nutella recipes!!
I really wanted to come up with something different so once this pie "came to me;)"
I checked around the net and was pleased to find there wasn't already a recipe out there.
So I looked around for a basic silk pie recipe and went from there.
As always the full recipe is available through the printable link.
This is what I came up with:
Make a pie crust and bake it-no pictures for this step.
In a medium sauce pan cook sugar, chocolate, milk and corn syrup together stirring occasionally, to the soft ball stage-234 degrees.
Remove from heat and add Nutella.
Mmmm-yummy!
Beat lightly for a few minutes.

Pour into cooled pie crust.

Chill thoroughly before filling layer.

Mix together the filling ingredients-cream cheese, Nutella, peanut butter, powdered sugar, pudding mix and milk. Beat until smooth.

This part is super important-
MAKE YOUR OWN WHIPPED CREAM!!!
Just one of those things you just do;)

Then gently fold into filling mixture until well blended.

Pour over fudge layer.

Chill before serving...please..it's totally worth the wait!

Turtle Pumpkin Pie

This is a great way to mix up the classic pumpkin pie... not that it needs changing or anything!!! I love the pecans that are added to this and the creamy-ness of the filling!

This pie is pretty easy to throw together... especially if you "cheat" :) and use the store bought graham cracker crust!!


Throw your graham crackers in a food processor and pulse until finely chopped. The food processor make life so easy!!
Add melted butter and sugar and mix until combined.

Press into pie pan... be sure to go up the edges as well. Bake at 350° for about 6-8 minutes. Let Cool.

Add some caramel to the bottom of the crust and top with pecans. Looks so nummy already!!! Love the pecans!

Mix together vanilla pudding, pumpkin, milk cinnamon, nutmeg and cool whip. Blend together and spoon into pan on top of pecans and caramel. Refrigerate for one hour.


Top with remaining cool whip, caramel and pecans!!


Dig in ......

Ours was a little soft but you can so all the layers of good-ness here!! Def a great one to try!!

Truffle Pie

"The layers in this pie are mind-boggling. We make it for dessert whenever we have chocoholics over." The Deen Brothers

This pie is for chocolate lovers only! I have considered myself to fit that mold but this was a bit too much chocolate for me! My hubby loved it Although he did say the chocolate was a little strong. He gave some to his boss who said it was pretty good-not a man of many words:)

Truffle Filling:
2/3 c. heavy cream
6 oz. bittersweet chocolate chips

For the truffle filling, in a saucepan, bring 2/3 c. cream to a simmer. Place the 6 oz chocolate chips in a bowl and pour the hot cream over the chocolate. Let stand for a min, then gently whisk until smooth. Spread the truffle filling over the bottom of the prepared crust. Freeze for 20 mins.
1 9-inch prepared or make your own

Whipped Chocolate Filling:
6 oz. bittersweet chocolate chips-here I used German Sweet Chocolate
1-1/2 c. heavy cream
1/2 t. vanilla

Meanwhile for the whipped chocolate filling, in a double boiler or the microwave set on low power, heat the 6 oz choc with 1/2 c. heavy cream until chocolate is melted, stirring often. Let cool to room temp. In a chilled bowl, beat the remaining 1 cup of cream until thick. Add the chocolate mixture and the vanilla and beat til soft peaks form {tips curl}. Spread the whipped chocolate mixture over the truffle filling int the crust. Refrigerate over night.

This recipe calls for all bittersweet chocolate and I'm glad that I used it only in the truffle filling part because it was a little much- next time I will use German Sweet and Milk Chocolate for the whole thing.

Whipped Cream Topping:

1 c. heavy cream
1/4 c. powdered sugar

Garnish:
white chocolate~shaved
milk chocolate~shaved
semisweet or dark chocolate~shaved

Just before serving beat the 1 c. cream on medium speed of an electric mixer until it begins to thicken. Add the powdered sugar and whip until stiff peaks form {tips stand straight}.
Spread the whipped cream over the top of the pie. Using a grater or peeler make pieces or shavings of the chocolates. Garnish. Serve immediately.

Remember to make this pie the day before so it can firm up in the fridge.
