Chicken-Pesto Burgers

Best chicken burger ever!!!
I've made this several times trying to get exactly the right flavor combo I wanted.
As ya'all may have notice I love chicken, pesto, sun-dried tomatoes and artichokes:)
So I figured with these ingredients you can't really go wrong anyway and every time I made it I loved it more!

Ingredients:

listed above

season with these

mix everything except artichoke

make into patties and freeze for about 30 minutes or until firm-for easier grilling.

this stuff is a must-tastes awesome and if your burger is a little dry, as chicken tends to be, it will add just the right amount of moistness:)

throw 'em on the grill!

Mexi Chicken Burgers

These burgers are delicious and very flavorful-fresh cilantro, chipotle pepper, garlic and lime!
The filler is summer squash, polenta and red pepper.
A couple slices of tomato and some creamy avocado is the perfect topping for these burgers, all wrapped up in a corn tortilla.
You can add sour cream and a drizzle of salsa if you like a little sauce.
This recipe is another one from Weight Watchers Magazine-I'm loving trying out bunches of their recipes!

Summer Squash Turkey Burger

What better way to kick off Summer than with a burger!!!
Yay!!!! Summer is finally here!!!
At least the calendar says it is...;)

This burger is perfect with or with out a bun.
Sometimes when its hot it's kinda nice to just use a "lettuce" bun:)

Turkey has a tendency to be a little dry so I added summer squash, red onion, and parsley-it made these burgers moist and delicious!
I topped them off with a Pomi sauce I came up with to season it up even more!

You could also add some fresh chunks of avocado for a little bit of a creamy texture.

Mini Pork Cheeseburgers

I made these burgers for my family one day last week, while I thought they were really good and full of flavor, my kids didn't really want anything to do with them! They have severe aversion to anything they think has onion in it! I would definitely make them again and I think you all should give them a shot to;)

2 lbs ground pork
1 clove garlic-minced
2 t. smoked paprika
1 t. ground cumin
1 T. Worcestershire sauce
salt and pepper
Mix together above ingredients.

Swiss cheese
Buns

We broiled them in the oven for about 4 to 5 mins per side then topped them with a slice of Swiss cheese. Return to the oven for just a minute to melt cheese.
For the buns I used Rhodes Texas style dinner rolls-just let em raise and bake 15 minutes.
They make these burgers extra special because of the softness of the roll!

Patty Melts

I have always loved Patty Melts but for some reason never make them at home. So when i came across the recipe for a healthier version of a Patty Melt in the Food Network Magazine i decided to give it a try! The recipe is a little different than the traditional Patty Melt but still really nummy!!


Waiting to be devoured.. the burger was made with turkey and ground beef... makes you feel a little better about eating it!!


To get started, heat olive oil in nonstick skillet and add onions. Cook about 2 to 3 minutes or until soft.

Push the onions to one side of the pan, add the mushrooms and cook until browned, about 2 minutes.


Season with salt and pepper, then mix the mushrooms and onions together and cook until the onions are golden, about 10 more minutes.

Add the vinegar and 2 tablespoons Worcestershire sauce. Transfer the mixture to a bowl and keep warm.


Meanwhile, mix the turkey, beef and the remaining Worcestershire sauce in a bowl. Shape into 4 equal-size patties.


Either cook the patties on a grill or wipe out the skillet that was used for the mushrooms and onions and add 1 tablespoon olive oil. Over medium-high heat cook until browned on the bottom, about 4 minutes. Flip and cook through, about 1 to 2 more minutes.


Divide the onions and mushroom among 4 bread slices....


Top with a slice of cheese, a patty, another slice of cheese and another slice of bread. Wipe out the skillet; add another 1 tablespoon olive oil and place over medium heat. Cook the sandwiches in two batches until the bread is toasted and the cheese melts, 1 to 2 minutes per side, adding more olive oil if needed.


Lastly... enjoy!!! We did! :)

Pork Burgers and Loaded Potato Wedges

How many of you will be having a Barbeque this coming weekend??
These are some really yummy burgers you might want to try out on the grill for the holiday:)
They are a combination of 2 of Rachel Ray burger recipes-she is the queen of burgers!!

Pork Burger

2-1/2 lbs ground pork
2 t. ground coriander
1 t. cayenne pepper
1/2 t. cumin
salt and pepper
2 t. Worecestershire sauce
1 clove garlic minced
1 to 2 T. Parsley
olive oil
6 biscuits
provolone cheese
lettuce
tomato
onion

In a large bowl combine first 8 ingredients-mix thoroughly. Shape into 6 patties, freeze for 15 mins then brush with olive oil. Heat grill and grill burgers for about 6 mins on each side over medium heat. Top each burger with cheese and serve on biscuits with lettuce, tomato and onion. We just used onion and it was perfect!

Loaded Potato Wedges

6 russet potatoes
scrubbed and baked
Once they are baked scoop out the potato and blend til smooth add a little milk and butter.
Place the potato mixture back in the shells and top with cheese and return to oven for a couple mins. Top with bacon, ranch and sour cream.

Black and White Malted Milkshakes...

Summer is right around the corner and these 2 recipes are the perfect combo for the backyard barbecue! Both of these recipes are from Food Network.
I mean who doesn't love a milkshake!
Let's get right to it!!

Black and White Malted Milkshakes
2 pints good quality vanilla ice cream, slightly melted
3 to 4 T. malt powder
6 oz. chocolate sauce, divided
whipped cream, garnish
shaved chocolate, garnish
Place the 1 1/2 pints ice cream, malt powder, and 4 oz chocolate sauce in the blender and blend until smooth. Pour shakes into 2 tall glasses, leaving room at the top. Place an extra scoop of ice cream on top of each shake and drizzle the remaining 2 0z of chocolate sauce over. Garnish with a large dollop of whipped cream and some chocolate shavings;)

Looks delish right:)

The next recipe is for those of you who love burgers with a little heat to 'em:)

Latin Burgers with Caramelized Onion and Jalapeno Relish and Red Pepper Mayo

3/4 lb ground sirlion
3/4 lb ground chuck
1/2 lb raw chorizo, casings removed and crumbled
1 T. adobo seasoning
1 large onion, grated
1/2 c. dry bread crumbs
In a large bowl, mix thoroughly by hand-ground beef, chorizo, adobo seasoning, grated onion, and the bread crumbs. Form the burgers into 6 patties without them too much or they could become tough. Line a baking pan with waxed paper and put the burgers on in a single layer. Cover and refrigerate for at least 30 mins. This will help the burgers hold together.

Caramelized Onion and Jalapeño relish

2 T. olive oil
2 large yellow onions, finely sliced
Kosher salt and freshly ground pepper
1/2 c. bottled, sliced jalapeno chiles, drained
1/2 c. dark brown sugar

Heat olive oil in a heavy skillet over medium-low heat. Add the onions and season with salt and pepper. Add jalapeno chiles and the brown sugar. Saute for 15 mins or until the onion and chiles are caramelized and soft. Se aside.

Red Pepper Mayo

2 med jarred roasted red bell peppers, drained
3/4 c. mayo

Drain the red peppers and put them in the blender or food processor. Add mayo, and season with salt and pepper. Puree the mayo and peppers until well combined and smooth. * This may be done up to 2 days in advance to enhance the flavor-in fact the flavor will be more complete with an overnight chilling.
6 slices Oaxaca cheese or mozzarella
6 hamburger rolls
To make the burgers:
Preheat grill to med-high heat. Place the burgers on the grill and grill til desired doneness although with the raw chorizo you will want to grill to at least med-well. Approximately 10 mins per side. In the last 5 mins of cooking top with the slices of cheese so it can melt.

To serve: Spread about 1 T. of the red pepper mayo on both sides of bun. Lay on the burger and top with a couple spoonfuls of the caramelized onion and jalapeno relish.

These burgers were sooo good! The cheese is really what makes them extra delicious!
If you don't like heat then try using a lesser amount of the peppers-I think next time I make them I will try that because they were kinda spicy:)

Teriyaki Turkey Burgers

First off ~Happy Mothers Day!!!!~
Hope all you Moms are having an awesome day!
As I type my Hubby is making me breakfast;)
My kids have been so excited to give me their gifts they made in school,
its been fun listening to them try not to tell me what they are;)

These are some delicious burgers!!
They were surprisingly moist and very flavorful!

2 lbs ground turkey breast
1/4 to 1/2 c. bread crumbs
1/4 c. red onion finely chopped
4 T. teriyaki sauce
2 T. cilantro course chopped
Salt and Pepper
Buns
6 pineapple rings
shredded lettuce
6 slices provolone cheese


In a large bowl, combine the breadcrumbs, onion, teriyaki sauce, cilantro, and salt and pepper with the ground turkey. Divide into 6 burgers and shape into patties. Once pattied place in the freezer for about 10 mins~this will help hold their shape. Preheat grill or broiler. Brush burgers with olive oil to prevent sticking. Grill or broil for about 7 to 9 mins per side. Brush each side with teriyaki sauce in the last mins of cooking.
Top with cheese.
Grill the pineapple slice for about 3 mins per side brushing with teriyaki sauce.
Serve burgers on buns topped with lettuce and grilled pineapple.
Drizzle with teriyaki sauce.
