Blueberry-Sausage Strata

Blueberry season is almost here-Yay!!
I love, love blueberries and I'm really hoping to get out and pick some to freeze and some for yummy desserts and of course for this strata!
So with that being said here is an awesome and healthy recipe to use 'em up:)
This is another recipe from the Weight Watchers Magazine.
A little forewarning-this is an overnighter;)

Recipe Rundown:

sweet Italian turkey or chicken sausage
leeks
fresh thyme
blueberries
whole wheat crusty bread
milk
egg substitute-or egg whites
kosher salt
black pepper

Cook the sausage and leeks together.
I had to leave my leeks big enough to take out-don't want the kids freaking out!

Blueberries!!!
I used frozen they worked great!

Cut the bread into chunks.

add some of the berries to the sausage

Place half of the bread in the baking dish and top with sausage mixture, then eggs and top with remaining bread, pressing into egg mixture to moisten.
Cover and refrigerate over night or at least 8 hours.
Preheat oven to 325 degrees and bake for 60 to 65 minutes.

Serve with remaining blueberries and a drizzle of syrup.

Roasted Mushroom-Bacon Deviled Eggs

These were quick, easy and very tasty!
My hubby loves deviled eggs so much!! Like crazy-can't get enough of them much! So we decided to each try to come up with a spin-off recipe:)
Something that sounded good to each of us-believe me if you knew my hubby you would know some of the wacked up food combos he comes up with-I'll spare you all the details!
Although I have to admit he does every once in awhile come up with something delicious-like the Heavenly Monte Cristo's-YUM!!
Anywhooo back to the eggs...
Mine were the Roasted Mushroom-Bacon and his were Mexican Style and drum roll please;)
We both decided that mine won this round!
Both recipes are available in the printable and scroll to the bottom for a look at his:)

Here is a rundown of ingredients-mushrooms, bacon, mayo, sour cream, pepper, cumin, course salt, and a little parsley.
Here's me trying to be all creative;)

These lacked a little something but were still good-maybe they needed a little more kick.
Super simple and easy as well, here is the list-sour cream, chunky salsa, fresh cilantro, cumin and black olives for garnish.
These would be an awesome addition for your Superbowl party!

Turkey Benedict

Here is a must try for your Thanksgiving leftovers!

This a simple take on the traditional Eggs Benedict. We really wanted to come up with something different to use up all that leftover turkey!
We based this on our Dinner Eggs recipe {recipe to be posted soon!}
Here's the scoop: Layer turkey slices, then Swiss, eggs and then heavy cream and top with Parmesan cheese-bake for 30 mins or until golden.
You will need to bake your biscuits in the last 13 mins so everything is ready at once.

Take a biscuit and top it with cranberry sauce.

Then add the creamy delicious egg.

The best part;)
Pour on the Hollandaise sauce.
MmmmmYum!

And there you have it!!
This would be great for an after Thanksgiving brunch!

Maple Bar Bread Pudding

This recipe is one of those once in a while types-the amount of calories in 1 serving....well lets not think about it;) Either way it's for the books-sooo delish-not as sweet as you would think! The bacon adds just the right amount of salt to cut down on the sweetness of the doughnut.
I was checking for a different bread pudding recipe and chatting with my hubby when he came up with the idea to use actual doughnut-maple bars. I just kinda took it, ran with it and came out with this yummalicious dish!:)

4 ingredients are all you need-Yay!
8 maple bars
4 eggs
1 c. milk
4 large strips of bacon

Start by cutting the bars into cubes.
Layer into a 9x13 inch pan.

Whisk together milk and eggs and pour over the cubed bars.
Sprinkle with bacon and mix all together.
Bake at 375 for 40 mins.

Now you may want to use 1-1/2 c. milk but we like our bread pudding a little more dry than most people probly do:)
I was thinking-you could totally use your favorite doughnut really.
Wouldn't the Pumpkin Spice Cake doughnut be delish?!?!
Kids would so love sprinkle doughnut bread pudding:)
We could get real creative with all the options;)
