Marshmallow Creme Fruit Dip

This dip is perfect for a hot summer day and it's super easy!!
Three ingredients-how's that for easy-peasy?!?!!

marshmallow creme
cream cheese
orange zest

That's it!!!

Cilantro-Lime Guacamole


This stuff is seriously yummy!!
I'm a huge fan of Cilantro-Lime, this is one of my favorite savory flavor combos-Yum!
I love how bright and fresh tasting this guacamole is with the addition of the lime:)
I served it with sweet potato fries but I think it would be awesome with chicken nachos too.

First things first-the ingredient rundown:

avocado
lime zest and juice
cilantro
kosher course salt
garlic salt
fresh ground black pepper
cube avocado

zest some lime

squeeze 1/2 a lime

throw in some cilantro

mash and mix;)

Lime-Marinated Chicken with Avocado Dip

This meal reminds me of Summer...and I am soooo ready for Summer this year!! I didn't grill it but I will when I make it again:) This an overnighter though - I am always surprised by this because I'm one of those people who doesn't read all the way down the recipe to find these things out ahead of time;)

Avocado Dip:

1 lg.avocado, 3 T. chopped fresh cilantro leaves, 1-1/2 t. lime juice, 1 clove garlic, minced, 1/4 t. salt and freshly ground black pepper.
Peel and pit the avocado; mash in a small bowl. Fold in the cilantro, then stir in the rest of the ingredients gently.

Marinade:
1-1/2 limes
1/2 c. fresh cilantro leaves
1/4 c. vegetable oil
2 T. honey
1 to 2 jalapeno peppers, trimmed and sliced
2 t. tomato paste
4 cloves garlic, chopped
Pinch of salt

3 lbs chicken-wings, breast, tenders whatever you like
I used tenders.

For the marinade, finely grate the zest and squeeze the juice from the limes. In a blender, combine zest and juice with remaining marinade ingredients; puree until smooth. Pour marinade over the chicken and toss to coat. Cover with plastic wrap; refrigerate overnight.

Preheat broiler. Arrange chicken on a baking sheet. Season with salt and pepper. Broil at least 6 inches from the heat for 4 to 5 mins per side or until chicken is crispy on the outside and cooked through. Serve with Avocado Dip.
