Butterflied Cuban Style Pork Chops

It's coming people, it's coming-grilling season!!!
I for one can not wait:)
This recipe is perfect for the grill or for the broiler-
there are a few steps but totally worth the work:)
This one is courtesy of Bobby Flay and Food Network.
~
Ingredient list:
for marinade-
oranges and limes+ juice
oregano
garlic
cumin
canola oil
~
pork chops
salt and pepper
swiss cheese
ham
pickles
cilantro
olive oil

First make the marinade for the pork chops to soak for at least 15 mins or up to
2 hours.
Combine 1 6 ingredients for marinade

Slice open the chops

place chops into the marinade

pickles, Swiss cheese and ham

Open the chop and lay on the Swiss,

then ham,

then pickles and more Swiss.
Then grill or broil.

Delish!!!
Next time I will use boneless chops-other than that yum!!:)

Foccacia Bread

This bread is sooooo delicious and-the best part-easy!!!
Remember those Italian Chicken Sandwiches from a couple months ago?
This is the bread from those yummy, yummy sandwiches:)
It's a really quick bread to make only takes an hour from start to finish!!

Here is what you'll need:

Honey, warm water, yeast-let it set for 5 mins.

Stir in salt, olive oil, and chopped onion.

Start adding in flour...

Until the dough comes together-then knead until smooth and elastic.
Lightly oil a large bowl and place dough in turning once to completely coat.

Cover with a damp cloth and let rise 20 mins.
Preheat oven to 415 degrees.

Place dough onto an oiled baking sheet, flatten and use fingertips to make indentations.
Drizzle with oil, sprinkle with rosemary, Parmesan cheese and end with a sprinkle of Kosher salt.

Let rise for 10 mins.
Bake for 20 mins or...

until golden brown.

Go ahead grab a slice;)

Butterfinger Caramel Brownies


Gooey Goodness..... that is the best way to describe these
brownies!! The brownie is gooey to start and then the added caramel

just takes the brownies to a whole new level!


Just a few ingredients too!
Got to love that! :)

Mix the brownies according the package directions.


In a food processor, add about 2 to 2 1/2 candy bars.

Pulse until crushed!

Add the candy bars to the brownie mixture.


Pour into a greased 9x13-inch pan.

Drizzle with the caramel topping.....


Using a butter knife, slice thru the caramel going the opposite

direction to get the love spread into every bite!

Bake the brownies according to the box.


Let cool.


Place remaining candy bars in a zip lock bag....

and crush!!

(I didn't use the food processor for these ones as I

wanted bigger chunks!)

Mix powdered sugar, cocoa powder, vanilla and milk

for the icing.


It should be drizzling consistency!

Drizzle icing over brownies....


Spread evenly!


Sprinkle with your chunks of butterfingers!

You may have to press the butterfinger chunks down a little

to make sure they don't stick!

Cool again!



Cut and Enjoy!

Mmmm... just need a big glass a milk with this plate!

Double Stuffed Cupcakes

Double deliciousness!!:)
These cupcakes are stuffed with an Oreo cookie and a cheesecake filling-
over the top yummy!;)
The way I would describe the cupcake would be layers of Oreo goodness all wrapped up in a scrumptious cupcake package!!!
Try it-you'll see;)
Here's the rundown~a little virtual tour:

fill liner 1/4 the way with cake batter

top that with an Oreo

top it off with more batter
Bake at 350 degrees for 17 to 20 mins.
Cool.
Fill with cheesecake filling.
Frost with Buttercream Frosting.

Then feel free to enjoy;)

Crockpot Chicken Burritos

Don't you just love the days when you can throw everything in

the crockpot and when dinner time comes around you are all set??

Yes?? Me too!! Here is a good one for you then and

nummy too!


Throw some thawed chicken breast in crockpot.....

Sprinkle with seasoning. Have you tried this one yet?

Love the lime in it! Or use whatever seasoning you have on hand!

Add black beans and/or pinto beans. (I used can but in the end had

a lot of extra sauce so next time I will either drain the beans completely

or use dried beans so they can soak up all the goodness!)

Let cook for about 5 hours on high or until the chicken is cooked through.

Once chicken is cooked, remove chicken breasts from sauce

and shred with fork. They should just fall apart!


Return chicken to crockpot.....



Mix together and let reheat and you are ready to

start assembling the burritos.


Put a fair amount of chicken and bean mixture down

the middle of the tortilla.


Top with rice.

We used Cilantro Lime Rice from the Sisters Cafe Blog....

goes great with the burritos!


Start by folding one side of the burrito over and

tucking under the chicken and rice.....

Fold in the ends......


Roll the burrito and tuck in the ends.

(I still need a little practice!! :)


Mmmm... look at the layers!


Served with chips and our favorite Homemade Salsa!
